Our "buy-local" approach is based upon the following logic:

  1. Locally sourced food is fresher and tastes better and it contains more nutrients.
  2. Local food is safer due to more stringent government controls of the food chain.
  3. Buying local diversifies the local community's economy and provides more employment in our immediate region.
  4. There is a closer connection to the local farmer giving you the opportunity to actually know the people who grow and process your foods.
  5. The environmental impact is minimized because our food is not transported from foreign countries on diesel-fuelled, pollution-spewing trucks, trains or boats.

As respected environmentalist Dr. David Suzuki noted: "Eating locally isn't just a fad – it may be one of the most important ways we save ourselves and the planet!"

Our wines are predominately Ontario VQA, with some Okanagan selections and a few brands from The America's. We have chosen some of the finest grape varietals and blends available.

The majority of our draught beers are craft brewed within a 100km radius. Unlike wine, beer is rarely meant to age. It takes additives, excessive filtering and preservatives to extend the "shelf-life" of beer. Sadly, most of these processes take away from the taste of beer. At Borealis, we believe that beer is best when it is served unaltered and fresh. That is the reason why 22 years ago we were the first restaurant group in Ontario to fully embrace locally microbrewed draft beer. It is the freshest and most natural beer available for you our guests.

Most of our beers are made from only four ingredients; malted barley, hops, yeast and water. Our beers undergo very little processing and as a result, you will experience the freshness and quality of these fine beers.
